Make the Salsa
In a small bowl, mix together the chopped tomato, red onion, finely chopped jalapeño, cilantro, and lime juice. Season with table salt to taste. Set aside to let the flavors combine.
Prep the Aromatics
In a food processor, pulse the coarsely chopped jalapeño, white onion, and garlic until finely chopped. Scrape down the sides as needed to ensure an even texture.
Cook the Beef
Heat the extra-virgin olive oil in a medium skillet over medium-high heat. Add the ground beef and cook, stirring and breaking it up, until browned and thoroughly cooked, about 6–8 minutes.
Add the onion mixture and taco seasoning. Continue cooking, stirring often, until it begins to stick to the pan, approximately 6–8 minutes. Pour in a bit of water, scraping up any browned bits from the bottom of the pan. Stir and cook until the sauce thickens slightly, about 2 minutes.
Assemble the Bowls
Divide the seasoned beef and cooked rice among serving bowls. Top with the prepared salsa, sliced avocado, tortilla chips, shredded lettuce, and lime wedges. Serve immediately and enjoy!

Instructions
- Toss chopped tomato, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt and set aside.
- Pulse yellow onion, garlic, and remaining jalapeño in a food processor until finely chopped.
- Brown ground beef in a skillet (6-8 min). Add onion mixture and taco seasoning; cook until it starts to stick (6-8 min). Add water and stir until sauce thickens (2 min).
- Divide beef and cooked rice into bowls. Top with salsa, sliced avocado, tortilla chips, shredded lettuce, and lime wedges. Serve immediately.
