Beef Taco Bowl

Beef taco bowls with savory spiced ground beef over tender rice, topped with zesty pico de gallo, creamy avocado, and crisp lettuce. A squeeze of lime and crunchy chips add perfect balance.

Ingredients

  • 1 large tomato chopped
  • 1/2 medium red onion finely chopped
  • 1 jalapeño pepper half finely chopped, half coarsely chopped
  • 1/4 cup finely chopped cilantro
  • 3 tablespoons fresh lime juice
  • 1/2 teaspoon table salt
  • 1 small white onion coarsely chopped
  • 4 garlic cloves coarsely chopped
  • 2 tablespoons extra-virgin olive oil
  • 1.5 pounds ground beef 80/20 blend
  • 1 1-ounce packet taco seasoning mix
  • Cooked rice
  • Sliced avocado
  • Tortilla chips
  • Shredded lettuce
  • Lime wedges

Instructions

  • Toss chopped tomato, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt and set aside.
  • Pulse yellow onion, garlic, and remaining jalapeño in a food processor until finely chopped.
  • Brown ground beef in a skillet (6-8 min). Add onion mixture and taco seasoning; cook until it starts to stick (6-8 min). Add water and stir until sauce thickens (2 min).
  • Divide beef and cooked rice into bowls. Top with salsa, sliced avocado, tortilla chips, shredded lettuce, and lime wedges. Serve immediately.
