White Chocolate Chip Cookies

These are chewy, bakery-style white chocolate chip cookies made with melted butter. The dough requires at least an hour of chilling time, which is critical for the final texture. This recipe makes about two dozen cookies.

Ingredients

  • 2 cups All-Purpose Flour
  • 1 tsp Cornstarch
  • 1 tsp Baking Soda
  • 1/2 tsp Kosher Salt
  • 1 1/2 sticks Unsalted Butter
  • 1 cup Light Brown Sugar, packed
  • 1/2 cup Granulated Sugar
  • 1 Large Egg + 1 Large Egg Yolk
  • 2 tsp Vanilla Extract
  • 2 cups White Chocolate Chips

Make the Cookie Dough

In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt.

Melt the butter in a separate, large bowl in the microwave. Let it cool for a few minutes until it’s no longer hot to the touch.

Whisk the brown sugar and granulated sugar into the melted butter. The mixture will look grainy.

Add the whole egg, egg yolk, and vanilla extract and whisk until the mixture is smooth and glossy. Don’t overmix here; just combine everything.

Add the dry ingredients to the wet ingredients and fold them together with a spatula until just a few streaks of flour remain.

Fold in the white chocolate chips. The dough will be soft.

Chill and Bake the Cookies

This step is not optional. Cover the bowl with plastic wrap and chill the dough for at least one hour, or up to overnight. Chilling solidifies the butter and allows the flour to hydrate, which prevents the cookies from spreading too much and deepens the flavor.

When you’re ready to bake, set your oven to 350F. Line baking sheets with parchment paper.

Scoop the dough into balls, about 2 tablespoons each, and place them a few inches apart on the prepared baking sheets.

Bake for ~10-12 minutes. The edges should be set and light golden brown, but the centers will look soft and slightly underdone. This is what you want for a chewy cookie.

Let the cookies cool on the baking sheet for ~5-10 minutes before moving them to a wire rack. They will firm up as they cool.

  • Preheat oven to 350F and line baking sheets with parchment.
  • Scoop 2-tablespoon dough balls onto sheets, spaced apart.
  • Bake 10-12 minutes until edges are golden but centers soft.
  • Cool on baking sheet 5-10 minutes before transferring to wire rack.

Notes
