Ingredients
- 2.5 pounds chicken wings, cut at joints, wingtips removed
- 1 teaspoon fine salt
- 1 teaspoon ground black pepper
- 2 tablespoons melted unsalted butter
- 2 tablespoons white miso paste
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 garlic clove, finely minced
- 2 scallions, thinly sliced
- 1.5 teaspoons toasted sesame seeds
Tips Before You Start
For this recipe, you can use either whole chicken wings or presplit ones. If using presplit wings, aim for 2 pounds since it accounts for the discarded wingtips.
This recipe assumes you are using an air fryer setting on your oven. Some models need preheating, but the listed cook time works whether you start from a cold or preheated air fryer.
Preparing the Wings
If you’re using whole wings, cut them into flats and drumettes at the joint and discard the wing tips or save them for stock. Pat the wings dry with paper towels and season with salt and pepper.
Cooking the Wings
Place the wings in a single layer in the air fryer basket, with some overlap being fine. Air-fry the wings at 400°F until they turn golden brown and crispy. This should take about 18 to 24 minutes, flipping them halfway through the cooking time.
Making the Sauce
In a large bowl, whisk together the melted butter, miso paste, honey, vinegar, and garlic until the mixture is smooth and well combined.
Finishing and Serving
Add the cooked wings to the bowl containing the sauce, tossing to make sure they are evenly coated. Before serving, sprinkle the wings with sliced scallions and toasted sesame seeds.
