Ingredients
For the Squares:
- 3/4 cup all-purpose flour
- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 3/4 teaspoon baking powder
- 3/4 teaspoon ground cinnamon
- 2 large eggs
- 2 ripe bananas, mashed
- 2 tablespoons buttermilk
- 1 stick (1/2 cup) unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chunks
For the Ganache:
- 3/4 cup heavy cream
- 1 cup semi-sweet chocolate chips
Make the Batter
Preheat your oven to 350°F. Line an 8×8 inch square baking pan with parchment paper, leaving an overhang on the sides.
In a large bowl, whisk together the all-purpose flour, almond flour, granulated sugar, cocoa powder, baking powder, and cinnamon.
In a separate bowl, mix together the eggs, mashed bananas, buttermilk, melted butter, and vanilla.
Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Fold in the dark chocolate chunks.
Bake the Squares
Pour the batter into the prepared pan and spread it into an even layer.
Bake for ~25 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. Let the squares cool completely in the pan.
Make the Ganache and Finish
Once the squares are cool, make the ganache. Heat the heavy cream in a small saucepan over medium-low heat until it just begins to simmer.
Place the semi-sweet chocolate chips in a heatproof bowl and pour the hot cream over them. Let the mixture sit for a few minutes, then stir until the ganache is smooth and glossy.
Pour the ganache over the cooled squares and spread it into an even layer. Let the ganache set before slicing and serving.
