Chocolate Banana Squares

These are dense, moist, and deeply chocolatey squares with a noticeable banana flavor. They have a texture that's somewhere between a cake and a brownie, and they're topped with a simple chocolate ganache.

Ingredients

For the Squares:

  • 3/4 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 2 large eggs
  • 2 ripe bananas mashed
  • 2 tablespoons buttermilk
  • 1 stick unsalted butter 1/2 cup, melted
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chunks

For the Ganache:

  • 3/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 350°F and line 8x8 inch pan with parchment paper, leaving overhang.
  • Whisk together flours, sugar, cocoa powder, baking powder, and cinnamon in large bowl.
  • Mix eggs, mashed bananas, buttermilk, melted butter, and vanilla in separate bowl.
  • Combine wet and dry ingredients until just mixed, then fold in chocolate chunks.
  • Pour batter into pan and spread evenly.
  • Bake 25 minutes until toothpick comes out with moist crumbs.
  • Cool completely in pan.
  • Heat heavy cream until simmering.
  • Pour hot cream over chocolate chips, let stand 3 minutes, then stir until smooth.
  • Pour ganache over cooled squares and spread evenly.
  • Let ganache set before slicing.

Store in airtight container at room temperature up to 3 days.
