Ingredients
- 1.5 lbs lean ground beef
- 1 large yellow onion, diced (~1.5 cups)
- 2 green bell peppers, diced (~2 cups)
- 3 tbsp tomato paste
- 3 tbsp taco seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can sweet corn, drained
- 1 (15 oz) can diced tomatoes, undrained
- 1 (4 oz) can diced green chiles, undrained
- 4 cups beef broth
Brown the Beef and Vegetables
Get a large pot or Dutch oven over medium-high heat and add the ground beef.
Use a spatula to break it apart as it cooks; Once itβs browned, drain off any excess fat from the pot or use paper towel to remove.
Add the diced onion, bell pepper, tomato paste, and taco seasoning to the pot with the beef.
Stir it all together for ~2 minutes.
The onions will start to soften and the spices will become fragrant. This step builds a deeper flavor base.
Simmer the Soup
Add the drained and rinsed black beans and kidney beans.
Pour in the corn, the undrained diced tomatoes, and the undrained green chiles. Add the beef broth and stir everything to combine.
Bring the soup to a boil, then immediately reduce the heat to low.
Cover the pot and let it simmer for ~20 minutes.
This gives the flavors enough time to meld. The soup is ready to serve right after the simmer.
One-Pot Taco Soup

- 4 cups beef broth
Instructions
- Brown ground beef in large pot over medium-high heat, drain excess fat.
- Add onion, bell pepper, tomato paste, and taco seasoning to beef, cook 2 minutes.
- Add black beans, kidney beans, corn, diced tomatoes, green chiles, and beef broth.
- Bring to boil, reduce heat to low.
- Cover and simmer 20 minutes.
