One-Pot Taco Soup

Toasting the taco seasoning with the beef and vegetables before adding liquid wakes up those spices. Everything else comes from cans so this is ready in 30 minutes without sacrificing flavor.

Ingredients

  • 1.5 lbs lean ground beef
  • 1 large yellow onion ~1.5 cups, diced
  • 2 green bell peppers ~2 cups, diced
  • 3 tbsp tomato paste
  • 3 tbsp taco seasoning
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can kidney beans 15 oz, drained and rinsed
  • 1 can sweet corn 15 oz, drained
  • 1 can diced tomatoes 15 oz, undrained
  • 1 can diced green chiles 4 oz, undrained
  • 4 cups beef broth

Instructions

  • Brown ground beef in large pot over medium-high heat, drain excess fat.
  • Add onion, bell pepper, tomato paste, and taco seasoning to beef, cook 2 minutes.
  • Add black beans, kidney beans, corn, diced tomatoes, green chiles, and beef broth.
  • Bring to boil, reduce heat to low.
  • Cover and simmer 20 minutes.

Notes

Drain and rinse beans before adding. Keep tomatoes and chiles undrained.
