Ingredients

  • 1 pound 85 percent lean ground beef
  • 1 cup finely chopped onion
  • 12 ounces (3 cups) elbow macaroni
  • 2 cups beef broth
  • 1 (15-ounce) can crushed tomatoes
  • 1 tablespoon soy sauce
  • 1 tablespoon yellow mustard
  • Salt and pepper
  • 6 ounces chopped deli American cheese
  • 1/2 cup chopped dill pickles

Cook the Beef

In a 12-inch nonstick skillet over medium-high heat, cook the ground beef and 1/2 cup of onion. Continue cooking until the beef is no longer pink, about 7 minutes.

Add Pasta and Simmer

Add the macaroni, beef broth, crushed tomatoes, soy sauce, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

Bring the mixture to a boil. Then cover the skillet, reduce heat to low, and let it simmer.

Cook, stirring occasionally, for 8 to 10 minutes or until the macaroni is tender.

Finish and Serve

Stir in the cheese, pickles, and the remaining 1/2 cup of onion. Adjust the seasoning with salt and pepper to taste, and serve hot.
