Ingredients

  • 1 pound 85 percent lean ground beef
  • 1 cup finely chopped onion
  • 12 ounces 3 cups elbow macaroni
  • 2 cups beef broth
  • 1 15-ounce can crushed tomatoes
  • 1 tablespoon soy sauce
  • 1 tablespoon yellow mustard
  • Salt and pepper
  • 6 ounces chopped deli American cheese
  • 1/2 cup chopped dill pickles

Instructions

  • In a 12-inch nonstick skillet over medium-high heat, cook ground beef and 1/2 cup onion until beef is no longer pink, about 7 minutes.
  • Add macaroni, beef broth, crushed tomatoes, soy sauce, mustard, 1/2 tsp salt, and 1/4 tsp pepper.
  • Bring to a boil. Cover, reduce heat to low, and simmer, stirring occasionally, until macaroni is tender, 8-10 minutes.
  • Stir in cheese, pickles, and remaining 1/2 cup onion. Adjust seasoning with salt and pepper. Serve hot.
