In a 12-inch nonstick skillet over medium-high heat, cook ground beef and 1/2 cup onion until beef is no longer pink, about 7 minutes.
Add macaroni, beef broth, crushed tomatoes, soy sauce, mustard, 1/2 tsp salt, and 1/4 tsp pepper.
Bring to a boil. Cover, reduce heat to low, and simmer, stirring occasionally, until macaroni is tender, 8-10 minutes.
Stir in cheese, pickles, and remaining 1/2 cup onion. Adjust seasoning with salt and pepper. Serve hot.
