Ingredients

  • 1.5 pounds 85 percent lean ground beef
  • 1/2 cup panko bread crumbs
  • 2 tablespoons onion soup mix
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons unsalted butter divided
  • 1 onion halved and thinly sliced
  • 2 tablespoons all-purpose flour
  • 1.5 cups beef broth
  • 1 tablespoon fresh chives minced

Instructions

  • Combine beef, panko, soup mix, and pepper in a large bowl.
  • Shape into four 4-inch patties with a slight indentation in the center.
  • Melt 1 tbsp butter in a nonstick skillet over medium-high heat.
  • Cook patties for about 4 mins per side, until internal temp reaches 130°F.
  • Transfer patties to a platter and tent with foil.
  • Reduce heat to medium, add onions to skillet, and cook until softened, about 4 mins.
  • Stir in flour and cook for 1 min.
  • Whisk in broth, bring to a boil, and thicken sauce, about 4 mins.
  • Remove from heat, stir in remaining 2 tbsp butter, and season with salt and pepper.
  • Spoon sauce over patties, sprinkle with chives, and serve.
