Finely dice tomatoes, red onion, jalapeño, and cilantro. Seed tomatoes and jalapeño if desired.
In a bowl, mix diced ingredients.
Season with salt and lime juice; stir well.
Optional: add chopped pickled jalapeño.
Taste and adjust salt or lime juice if needed.
Let rest 30 mins for best flavor or serve immediately.
Avocado Pico: Incorporate 1 small diced avocado for creamier texture and richer flavor. Gently fold it in at the end to prevent mashing.
