Pico De Gallo

Pico de Gallo with fresh tomatoes, zesty lime, crisp onions, and a hint of jalapeño heat balanced by aromatic cilantro.

Ingredients

  • 2 Roma tomatoes diced and seeded
  • 3 tablespoons finely chopped red onion
  • 1 fresh jalapeño seeded and finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon table salt
  • 1 tablespoon chopped pickled jalapeño optional

Instructions

  • Finely dice tomatoes, red onion, jalapeño, and cilantro. Seed tomatoes and jalapeño if desired.
  • In a bowl, mix diced ingredients.
  • Season with salt and lime juice; stir well.
  • Optional: add chopped pickled jalapeño.
  • Taste and adjust salt or lime juice if needed.
  • Let rest 30 mins for best flavor or serve immediately.

Notes

Avocado Pico: Incorporate 1 small diced avocado for creamier texture and richer flavor. Gently fold it in at the end to prevent mashing.
Fruit Pico: Add about 1/2 cup diced fresh mango or pineapple for a sweet and spicy twist. This pairs especially well with grilled fish or shrimp.
Cucumber or Radish: Mix in 1/2 cup finely diced cucumber or 4-5 thinly sliced radishes to add extra crunch and freshness.
Spicier Versions: Replace the jalapeños with 1 finely chopped serrano or habanero chili. Adjust the amount based on your heat preference and taste as you go!
No Cilantro: Simply skip the cilantro or substitute with 2-3 tablespoons of chopped fresh parsley, Thai basil, or Korean perilla for a different flavor profile.
