Ingredients You’ll Need
- 1½ cups all-purpose flour
- ¾ teaspoon baking soda
- 1 teaspoon table salt
- 2 cups mashed very ripe bananas (about 4 bananas)
- 1 cup packed dark brown sugar
- 8 tablespoons unsalted butter, melted and cooled slightly
- 2 large eggs
- 1 tablespoon granulated sugar
Important Tips Before Baking
Ensure that your bananas are very ripe, preferably with deep speckles or even almost black. This will yield the best flavor and texture. Use a potato masher to mash them well.
This recipe works well in an 8½ x 4½-inch loaf pan. If you happen to be using a 9 x 5-inch pan, start checking for doneness 5 minutes earlier.
Placing your pan on a rimmed baking sheet will catch any possible overflow during baking.
Preparation Steps
Adjust your oven rack to the middle position and preheat the oven to 350°F.
Lightly spray an 8½ x 4½-inch loaf pan with vegetable oil spray.
Mixing the Batter
Combine the flour, baking soda, and salt in a medium bowl by whisking them together.
In a larger bowl, whisk together the mashed bananas, brown sugar, melted butter, and eggs until thoroughly mixed, making sure to break up any clumps of sugar.
Gently fold the flour mixture into the banana mixture until just combined. The batter should remain somewhat lumpy.
Baking the Bread
Place the loaf pan on a rimmed baking sheet. Pour the prepared batter into the pan and evenly sprinkle the granulated sugar over the top.
Bake until a toothpick inserted into the center comes out clean. This should take approximately 1 hour and 5 to 1 hour and 10 minutes.
Cooling and Serving
Allow the bread to cool in the pan on a wire rack for about 30 minutes.
Carefully remove the bread from the pan. Let it cool for an additional 30 minutes before slicing.
Serve the banana bread warm or at room temperature. To store, wrap tightly in plastic wrap and keep at room temperature for up to 5 days.
