Homemade Banana Bread

Ingredients

  • cups all-purpose flour
  • ¾ teaspoon baking soda
  • 1 teaspoon table salt
  • 2 cups mashed very ripe bananas about 4 bananas
  • 1 cup packed dark brown sugar
  • 8 tablespoons unsalted butter melted and cooled slightly
  • 2 large eggs
  • 1 tablespoon granulated sugar

Instructions

  • Preheat oven to 350°F.
  • Lightly spray an 8½ x 4½-inch loaf pan with vegetable oil spray.
  • Combine flour, baking soda, and salt in a medium bowl.
  • Whisk mashed bananas, brown sugar, melted butter, and eggs in a large bowl.
  • Fold flour mixture into banana mixture until just combined.
  • Pour batter into loaf pan and sprinkle granulated sugar on top.
  • Bake on a rimmed baking sheet for 1 hr 5 mins to 1 hr 10 mins, until a toothpick comes out clean.
  • Cool in the pan on a wire rack for 30 mins.
  • Remove bread from pan and let cool for another 30 mins before slicing.
  • Serve warm or at room temperature. Store wrapped in plastic wrap at room temperature for up to 5 days.
