Ingredients
- 1.5 pounds large shrimp (21 to 25 per pound), peeled and deveined, tails on
- 1/2 teaspoon kosher salt
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- 4 garlic cloves, minced
- 1/4 teaspoon red pepper flakes
What to Know Before Cooking
For best results, use untreated shrimp. If your shrimp have additives like sodium tripolyphosphate, skip the salting step.
Diamond Crystal kosher salt is used for this recipe. If substituting Morton kosher salt, use slightly less than the specified amount.
A rasp-style grater can quickly turn garlic into a paste.
To simplify the flavor, remove the garlic and red pepper flakes, perfect for pairing with cocktail sauce or adding to salads or pasta.
Salting the Shrimp
In a bowl, toss the shrimp with 1/2 teaspoon of kosher salt. Allow them to sit for 15 to 30 minutes.
Making the Garlic-Honey Butter
Combine the butter and honey in a small bowl. Cover and microwave until melted, around 30 to 60 seconds.
Mix in the minced garlic and red pepper flakes. Let it cool, about 5 minutes.
Preparing the Oven and Pan
As the butter mixture cools, adjust your oven rack to be 4 inches below the broiler and preheat the broiler.
Line a rimmed baking sheet with aluminum foil and place a wire rack inside.
Coating the Shrimp
Spread the shrimp on a large plate or cutting board and pat them dry with paper towels.
Return them to the bowl and pour the butter mixture over, ensuring even coating. It’s okay if the butter begins to solidify.
Broiling
Arrange the shrimp in a single layer on the prepared rack.
Broil until they are opaque and slightly charred, about 3 to 5 minutes.
Serving
Transfer the shrimp to a serving dish. Serve with lemon wedges on the side.
